1/4 C warm water
1/4 C butter, melted
1 C warm milk
1 egg
1 T honey
1/2 t salt
4 C bread flour (or 4 C all-purpose flour and 4 T gluten flour) plus or minus to right consistency of dough
1 package yeast (a little less than a T)
Dissolve yeast and honey in warm water and let proof while combining flour, salt, milk, butter, and egg. Once yeast mixture is foamy, add to flour mixture. Knead until elastic.
Let rise in greased bowl covered with saran wrap in warm place until doubled in size (about 1 hour). Punch down and form into nice round mound. Divide into 16 sections and roll each section into a ball. Place in greased 9x13 pan. Cover and let rise until double in size (about 45 min). Bake at 350 for about 15 minutes, or until golden on top.
